Kick is younger than Twitch, so viewers browsing categories compare channels quickly, and the follower count is the most visible number on a channel card. A higher count helps a new streamer look established next to channels that moved over with an existing audience.
Followers are also part of the requirements for Kick programs, but those programs look at real watch time and activity too, so followers are a starting point, not a shortcut.

Yes. Delivery does not touch your broadcast, so you can order before, during or after a stream. Many streamers order a few hours before a scheduled stream so the count has already moved when viewers arrive, then keep the same schedule over the following days.
